Try this...

TRY this twist on the traditional version. It uses sweet pears and tart cranberries and is topped with a nutty pecan crumble.

Serves: 6, Preparation time: 15 Minutes, Cooking time: 25 Minutes.

Ingredients: 150g pecans, 75g cold butter, in small pieces, 100g plain flour, 100g demerara sugar, 4 pears, 200g cranberries, Zest of 1 orange, 4 tablespoons caster sugar.

Method: 1. Preheat the oven to 180°C, fan 160°C, gas 4. For the topping, first whiz a third of the pecans in a processor until finely chopped.

2. Add the butter, flour and sugar and whiz again to crumbs. Tip in the rest of the pecans and pulse chop – you want them chunky.

3. Peel the pears, cut into chunks and toss with the cranberries, orange zest and sugar.

4. Divide between four small individual ramekins.

5. Sprinkle with the topping – leave a few spaces. Bake for 25-30 minutes.
